Day 1 Bake off coconut cream pie




So I decided to start off this month with a pie.

a. Because I can appreciate pie. And occasionally eat it

b. Because I have never made a pie shell before.

The pie I decided to make is..... Coconut cream pie!! I love coconut so it seems like a win win situation. I decided the quickest way to find a recipe would be to look on Epicurious. There I found a recipe (including crust) that was rated 4 spoons.

Making the crust.....

The crust directions were easy to understand. Although the 4 tbsp of water was only half of the water I ended up needing. Before adding the extra 4 tbsp of water, my dough was super dry and wouldn't make a ball at all. I decided to add the extra water 1 tbsp at a time.

I made the ball of dough into a disk and did refrigerate it for 1 hr. The directions did not say weather or not to butter the pie mold so I did. ( who knows if this is necessary???) rolled it out and put it in the freezer for almost 15 min. I used the beans to weight it down and baked it. Since I didn't read the directions through, I didn't realize I needed to take the beans out after the first 20 min of baking. When the timer went off I was confused.
Why hadn't the crust turned brown?????
So I closed the oven and set the timer for 5 more minutes. Opened the oven.
The edges are brown! I looked under the beans.
Not brown at all. Sad panda.... Maybe I should read the directions.
oh, take the beans out after the first 20 minutes and bake for 10 more min.

The filling.... Was super easy. no problems there.

The topping. I doubled it. It made the pie look pretty panda.

FYI writing about baking is not humorous.

Baking writing can be humorous if you just add panda commentary to everything. I picture pandas making pie in your kitchen and that cracks me up plenty.
